The only worried one was Alain Senderens who worked for several months on this very stressful lunch even if he says he was very proud that it took place in his restaurant rather than elsewhere…
The 'entrée', a plate of "three-way" ceps, was directly inspired by the Champagne Gosset CELEBRIS 1990, a well-developed wine that smells of autumn and the undergrowth. But as he also received magnums, the guests therefore had two glasses at the table, the bottle for the basic preparation and the magnum for the two others.
